Valentine’s Day is almost here, this is the perfect easy dessert that takes minutes to prepare and yet has such an elegant look with the pop of luscious red raspberries. It seems our fast paced lives don’t always lend time for fussy desserts. Jell-O is one of those items that I don’t see very often at a table spread. Back in the day Jell-O desserts were found as a common item at pot lucks and Sunday dinner tables. It was one of those table favorites that you could put in a fancy mold, add some fruit and presto you have a delightful looking dessert just like that. With time crunched schedules, that most of us have, I wanted to whip up a tasty treat in minutes that can be done Vegan style or you can substitute for the well known brands of the regular products, which are not vegan friendly, that are available at your local grocery store. However, you may be surprised how readily available these vegan friendly items are. Most grocery stores have a natural foods section making it easier than ever to find gluten free, dairy free and vegan options. My go to store in my area is Fresh and Thyme, they tend to have berries on sale quite often along with offering a multitude of health conscious products. I also love the fact that the store is smaller thus making my time shopping for items much more efficient.

I was in Michaels craft store last week and found the perfect little cups for this dessert. They are called 2.83” Clear Mini Square Cups by Celebrate It and come packaged with 12 of them. They are food safe and can be hand washed if you want to reuse them. The vegan jello can be found at most of the local grocery stores in the natural foods section as mentioned above or on Amazon. The name of the company is BaKol and the item is Jel Dessert which comes in a multitude of flavors. So, if raspberry is not your flavor they also have strawberry and cherry. This recipe can be altered to any of these flavors and would recommend if you are altering the recipe to also follow suite with the same fruit as the Jel Dessert flavor.
I was pleased to find that Reddi Whip now makes a coconut and almond milk whip. They have great taste and texture. From experimenting I feel the Almond Milk Reddi Whip actually dispenses better. I found that the Coconut Milk Reddi Whip needed to be shook extremely well and left on the counter for a bit to warm up before it would dispense evenly. I am assuming it solidified in the cold fridge a bit more than the almond milk whip.

One last item was added to the minimal list for making this pretty dessert. I wanted to put a symmetrical spin on the dessert to add some visual appeal. I was able to accomplish this by taking my muffin baking tin and placing the mini cups at an angle before pouring in the jello. Then carefully I placed the filled cups resting in the tins into the fridge so they could set and be ready for adding the raspberries and Reddi Whip. That’s it! Shopping list and recipe below. Ingredients
- Raspberry Jel Dessert by BaKol
- Pint of Raspberries
- Almond Milk Reddi Whip
Instructions
- Prepare Raspberry jello accoding to package.
- Pour jello into cups about half way full.
- Allow jello to set according to instructions on package.
- After jello is set add raspberries and Reddi Whip.
- Serve and Enjoy!
